Today we started off with 4,000 pounds of white and sweet potatoes, which we then washed, cut and blanched. After they cooled we packed them into the walk in refrigerator to await Friday morning of the Fair! Of course, we ran a few through the fryer for test runs. This weekend, Nov 22 & 23, is fondly called French Fry Weekend. On Saturday and Sunday, we will wash, punch & blanch 1500 pounds of sweet potato fries and 2500 pounds of white potato French fries….That’s 2 tons of fries!!!
